First off big thanks to my dad for being patient with me while I took the picture 🙂
This dip was completely gone within 30 minutes — it is SO good and easy to make. Do not worry it is not too spicy
AND it is naturally gluten – free 🙂
I love this recipe since most of the ingredients you should have in hand in your pantry ( I love not having to buy a bunch of extra ingredients) the cost of this dish is about $6 and is enough for 6 BUT my family of four ate it up FAST
It kinda ruined our lunch plans ( BUT IT WAS SO GOOD)
One thing you can change with this recipe is the amount of onions used – we are not a huge onion family so I used about 1/4 cup but you can easily use 1/2 cup
I also decided to use a cast iron skillet ( I love making dips in them) – use you can use a regular skillet if you would like
Okay… In all seriousness I just got hungry looking at this picture. The dip is mild enough for kids to enjoy. If you want to make it a bit healthier use can easily use a pound of ground turkey

Beef Enchilada Dip Recipe

Ingredients
- 1 Pound of Ground Beef
- ¼ Cup of White Onion, Diced
- 2 Garlic Cloves, Diced
- 1 Cup of Enchilada Sauce
- 2 Cups of Monterrey Jack
- Olive Oil
- Tortilla Chips ( For Dipping)
Instructions
- Over medium heat place about 2 teaspoons of olive oil in a medium skillet
- Once the oil is hot add onions - cook for 5 minutes
- Add garlic to the skillet - cook for 3 minutes
- Add ground beef - cook till brown.
- Drain excess fat from skillet
- Pour in enchilada sauce and stir
- Sprinkle cheese on top and cover skillet for 10 minutes - set heat to low
- Uncover and serve with chips
- Enjoy

Made this today. I used garlic powder and onion powder instead of the actual garlic or onion, with salt and pepper. (therefore no oil needed). Even my 6 year old is loving it. I crunched up my tortilla chips and put them in a bowl, then covered the dip with it. Kind of like chili style. 🙂 Yummy!
