  • Make the honey syrup dressing. In a large bowl, combine the honey, lime juice, and lemon juice. Start with 2 tablespoons of honey, and whisk the ingredients together.   • Toss to coat. Add the remaining ingredients to the bowl of fruit, and feel free to add any additional ingredients you want to spruce it up even more! This winter fruit salad is a quick and easy recipe that brings loads of texture and flavor to the table. Ingredients

For the dressing:

  • 2 to 3 tablespoons honey, warmed
  • Juice of 2 large limes
  • ¼ cup orange juice

For the salad:

  • 2 large apples, cored and thinly sliced (Honeycrisp or gala apples will work)
  • 2 Bosc pears, cored and thinly sliced
  • 3 Clementine oranges, peeled and segmented
  • 3 kiwis, peeled and thinly sliced into rounds
  • 1 cup pomegranate arils
  • ½ cup chopped walnuts
  • 6 to 10 fresh mint leaves, chopped (optional)

Instructions

  • Make the dressing: In a large mixing bowl, combine the dressing ingredients of honey, lime juice, and orange juice, and whisk.

  • Add the fruit: Add all the fruit and chopped walnuts. Sprinkle with mint, if using. Toss everything until well combined. Serve!

  • To add more flavor and a little Mediterranean flare, sprinkle a couple tablespoons of unsweetened shredded coconut.
  • You can also try adding 1 tablespoon of pomegranate molasses to the dressing. Pomegranate molasses is great in salad dressings; it adds a bright tangy-sweet note that is unlike anything else.

  4. How long does this last? Should it all be eaten immediately?

    1. Hi, Charlotte. It's best served the same day, but I have stored leftovers in an air tight container in the fridge for a few days before. It was still delish and there was little browning on the fruit because of the citrusy dressing.
